The History of Sauerkraut

Sauerkraut is a Love-Hate food that you will find folks that turn up their nose and say ohhh gosh that is so sour and awful. Turn back the clock a few thousand years and a Chinese version was the main sustenance for thousands of workers that built one of the great wonders of the world The Great Wall of China. 

I have been making Sauerkraut for years, and it is very easy to do  and I feel the great benefits of the all the pro biotics that are great for gut health, but this is only the fresh kraut, and not the cooked kraut that you buy in a jar. Once it is cooked the healthy live  bacteria is killed. 

However cooked sauerkraut still has many health benefits and if you cook it in the German style I learned, in good beef stock with apples and onions it is not sour at all.
